More than a decade since the ‘pipe-dream’ idea was first conceived by wine merchant Ian Stirling and finance director Paddy Fletcher over a dram in Milroy's whisky bar, London, the £12m nine-storey distillery is complete and ready to welcome visitors.
My partner and I were lucky enough to get a first look at Scotland and the UK’s first ever vertical distillery, and it’s SUPER COOL!
We went on a tour of the building, seeing the multilevelled design of the production area. The top floor has the mills, middle has the mash tun and the bottom floor has the pot stills! And all this with 360* view of Leith waterfront! It was super fascinating to see how the spaces were designed to utilise gravity for the whole process, and how they overcame issues around land use.
Everything is brand new as well - they haven’t even started their whisky production! So all the equipment was SHINY! Never seen that before 😂

We even bottles our own mini new make spirits to take home as souvenirs, and try some too. It’s potent though, fair warning!
The stylish, modern yet industrial bar on the 8th floor was a great way to end the experience! Tried some whisky based drinks and really enjoyed the vibe.

Bookings are now live for Port of Leith’s tour and tasting experience, with tours running 12-8pm Wednesday to Friday, 11am-7pm on Saturdays and 12pm-5pm on Sundays. Check em out!
